Read every pan's brine density in degrees Baumé, its salinity, depth and crystal state; record each harvest as a fleur de sel skim or a sel gris draw with wet and drained weights, moisture and crystal grading in millimetres; run the sluices against the tide table and log evaporation and rainfall; grade and release lots against laboratory and sensory results; work the flaking pans and smoking chamber; pack, stock and despatch by SKU and batch code; hold the chef, delicatessen and distributor accounts; and meet the saltmarsh conservation obligation with habitat and bird-survey records — with a customer portal that traces every pack back to the named pans it crystallised in, the salter who raked it, the Baumé at harvest and the weather of that week. Designed as an 18th-century Portuguese azulejo tile panel — cobalt painted on tin-glazed white, the works plan brushed across a visible tile grid inside a painted guilloche border.
