Dunnage

Dunnage runs a Speyside bonded maturation estate — four earth-floored dunnage warehouses and one racked store holding 38,400 casks under bond for the distillery and for 214 private owners. The Cask Register carries every cask by number, wood and history, age, original and regauged litres of pure alcohol, strength at fill and at last gauge, the angels' share per year, stow position, duty-suspended value and maturation stage, with hard flags for leakage, slipped hoops, overdue regauges, angels' share above expected and approaching duty points. Beyond it: warehouse and stow with rack, bay and tier occupancy; the filling store and cooperage with wood provenance and repairs; regauge and excise with HM Warehouse returns and duty calculations; the nosing room with tasting notes, scores and sample draws; blending and vatting with recipe components and marrying time; bottling and outturn with cask strength, dilution and bottle counts; cask ownership with transfers and certificates; and an owner portal showing a private owner's own casks, their regauge history and current value.
